Nolen gur — date palm jaggery — is one of Bengal's most beloved ingredients. It appears in every winter kitchen, in the mishti doi, in the sweet rice, in the patishapta crepes. It is sweet in a way that refined sugar cannot replicate: complex, caramel, with a deep warmth that feels ancient.
